Chicken Soup for the Soul
This popular series has a story submission process at their website. They prefer submissions over the internet. There are specific story guidelines and a list of what books they are going to produce in the near future. Stories should be non-fiction, ranging in length between 300-1200 words. They do pay for stories published. They develop these books over several years and sometimes will use a story in another book than you thought they would use. Since they receive thousands of submissions, don't expect a confirmation of receipt unless they actually decide to use your story.
